Bihari Thekua Recipe
Ingredients:
- 2 cups whole wheat flour
- 1 cup powdered jaggery (gur)
- 1/4 cup water
- 1/4 cup chopped dry fruits (cashews, almonds, raisins)
- 1/4 teaspoon cardamom powder
- Ghee (clarified butter) for deep frying
Instructions:
- In a mixing bowl, add the whole wheat flour and cardamom powder. Mix well.
- In a separate pan, heat the water and add the powdered jaggery. Stir continuously until the jaggery dissolves completely and you get a thick syrup-like consistency.
- Remove the jaggery syrup from heat and let it cool for a few minutes.
- Gradually, add the jaggery syrup to the flour mixture. Mix well to form a dough. You may need to adjust the amount of syrup based on the dough's consistency. The dough should be firm but pliable.
- Once the dough is ready, cover it with a clean cloth and let it rest for about 15-20 minutes.
- After the resting time, knead the dough again for a few minutes.
- Take a small portion of the dough and roll it into a small disc or flatten it with your hands. The thickness should be around 1/4 inch.
- Press some chopped dry fruits on top of the flattened dough and gently press them in.
- Heat ghee in a deep pan or kadai for deep frying. Make sure the ghee is hot but not smoking.
- Carefully slide the prepared thekua into the hot ghee and fry on medium heat until it turns golden brown and crisp on both sides.
- Once fried, remove the thekua from the ghee and place it on a kitchen towel to remove excess oil.
- Repeat the process with the remaining dough and fry all the thekuas in the same manner.
- Allow the thekuas to cool completely before storing them in an airtight container.
