Bihari Thekua Recipe

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup powdered jaggery (gur)
  • 1/4 cup water
  • 1/4 cup chopped dry fruits (cashews, almonds, raisins)
  • 1/4 teaspoon cardamom powder
  • Ghee (clarified butter) for deep frying

Instructions:

  1. In a mixing bowl, add the whole wheat flour and cardamom powder. Mix well.
  2. In a separate pan, heat the water and add the powdered jaggery. Stir continuously until the jaggery dissolves completely and you get a thick syrup-like consistency.
  3. Remove the jaggery syrup from heat and let it cool for a few minutes.
  4. Gradually, add the jaggery syrup to the flour mixture. Mix well to form a dough. You may need to adjust the amount of syrup based on the dough's consistency. The dough should be firm but pliable.
  5. Once the dough is ready, cover it with a clean cloth and let it rest for about 15-20 minutes.
  6. After the resting time, knead the dough again for a few minutes.
  7. Take a small portion of the dough and roll it into a small disc or flatten it with your hands. The thickness should be around 1/4 inch.
  8. Press some chopped dry fruits on top of the flattened dough and gently press them in.
  9. Heat ghee in a deep pan or kadai for deep frying. Make sure the ghee is hot but not smoking.
  10. Carefully slide the prepared thekua into the hot ghee and fry on medium heat until it turns golden brown and crisp on both sides.
  11. Once fried, remove the thekua from the ghee and place it on a kitchen towel to remove excess oil.
  12. Repeat the process with the remaining dough and fry all the thekuas in the same manner.
  13. Allow the thekuas to cool completely before storing them in an airtight container.
